Cooking with EggFace – Foil Wrapped Cod with Pesto

This is another Eggface inspiration. I had some cod in the freezer that I didn’t know what to do with. Problem solved. Seven ingredients total and easy dinner clean up!

    Looks great! I’ve only done the foil packet with salmon before but this looks like a winner! Too bad the man doesn’t like pesto – how silly is that?

    Tracey, no pesto? That is slightly silly. But he’s adorable so we’ll keep him.
    There was another parchment paper salmon recipe that you reminded me of. I will look that up and post it.

    Have you seen the Good Eats episode where Alton Brown discusses cooking in parchment and foil (The Pouch Principle – http://www.foodnetwork.com/good-eats/the-pouch-principle/index.html). It’s really a great idea starter on what can go into packet cooking. He did a great recipe with ramen noodles (the 5 for a dollar kind), that looked delish.
